polishing doesnt remove the top coat perse....I'll use swirl marks as an example
A swirl mark is a very light scratch that is most likely in the clear coat. Swirls can be visualized as tiny canals in your clear coat. By polishing your car with cetain polishes/pads you flaten out the canal. You bring the top edges down to the level of the bottom of the canal.
There are various polishes you can use. Some that are very abrasive that will cut a lot of clear if you dont know what youre doing....some that you can use that will just fill in the scratches/swirls temporarily, those are mostly known as a glaze....
So to answer your questions head on....polishes remove some clear coat to level the surface. You can polish a car and bring it to its original shine and in most cases with the right glaze/wax/sealant you can get it to look even better then that.

clean car with dawn...yes a dishwashing soap it takes care of a lot of mess, then mothers clay bar, then do the mothers 3 step stuff (cleaner/seal/wax you can skip the cleaner step if you want but if its your first time do it). and then after all that...cry because your car is going to shine so bright

yeah, Dawn will probably give you some crazy water spots....it will strip anything on the surface like previous wax but cleaner is better.
Autogeek would be a good place to start and check out any products. Most of the products have a detailed explanation of what it does and how to use it.
The things youre looking for....Depends on what you exactly want.

Never Use Dish Soap To Clean Your Car Bad Bad Bad Bad
Actually, it's not bad but it does strip everything from the paint that a claybar won't meaning that you'll need to re-apply polish, glaze/sealer and finally wax.

I wouldn't recommend dishwasher soap because just like everyone else said it takes off any previous work you have done and can even start to eat away at your clearcoat after awhile.
Autogeek.net and Meguiars.com (forums and how to's) are where I learned most of my detail knowledge.
I bought the Meguire's (spelling is incorrect) Clay bar kit (just because it had 2 50gram bars instead of the 80 gram Mother's is) I plan on totally detailing my car early tomorrow, so you know the answer please reply ASAP
After claying, is it NECESSARY to use a polish? or may I skip the polish level and move straight to wax. I've never clayed my car...but have waxed with NXT 2.0
