Here's a zipped pdf of page out of the 2001 FSM that shows the parts of the rear axle. This board doesn't allow .pdf attachments sp so I zipped it.

As you will see, it shows it with the drum and disk brake parts.

With a non-ABS system, another thing to think about is a master cylinder/proportioning valve swap with one from a SE for correct brake fluid pressure.

What else would need doing besides calipers?

I don't think you need anything else (besides the caliper). Everything looks very straight forward. According to the diagram, you don't even need new knuckes. And if you have a non-ABS, the conversion is even simpler! I think the tricky part would be the parking-brake mechanisms/cylinders.
