What should I use to deice the windshield? I am thinking in lieu of rubber that can degrade when it comes in contact with these liquid.

You couldn't possible hurt the rubber or plastic around your windshield with alcohol that is diluted from the melting ice. The concentration would be very low by the time it made it to those materials. If you have a thin layer of ice then you don't need to be using anything but an ice scrapper and defrost. As far as vinegar/acetic acid goes I only use it to clean hard water deposits off of metal, I wasn't aware it was good for melting ice and I don't know how it acts on plastic/rubber.
