After having torqued all the nuts on the valve cover, how long should I wait to turn on the car to check for oil leaks? Should I wait for the sealant to cure which is like a day, or a few hours, or can I check pretty much right away? I used Permatex Ultra Grey if that makes any difference.

No. It's the one with that's designed for high-torque applications (Mainly Imports). The Nissan Dealership here uses it. It pretty much goes for the same temperature as the Ultra Black.

Permatex Ultra Grey

Edit:// So I turned the car on after about 3 hours and let it run for about ten minutes. I saw no leaks. Should I keep checking to see if leaks develop over the next week or am I afe to assume I did a pretty good job?

20 minutes minimum depending on temperature, 2 hours should be more than enough. I let mine sit overnight when I replaced that oil seal between the lower front cover and the block. Too tired to mess with it any more that day.
